Peanut Butter Bars

I got this one out of the Calgary Herald.



Ingredients:
    1 6 oz package of semi-sweet chocolate chips.
    ½ cup butter, softened
    2/3 cup peanut butter
    1 cup firmly packed light brown sugar
    1 egg, beaten
    1 tsp vanilla extract
    1 ¼ cups flour
    ½ tsp. baking soda
    ½ tsp salt
    1 ½ cups raw quick-cooking oats


Instructions:
Grease and flour a 9x13 inch baking pan. Melt chocolate in a double boiler over hot water. Cream butter and peanut butter, add sugar, egg and vanilla and mix well.

In another bowl, combine flour, soda, and salt and stir into creamed mixture. Stir in oats.

Press 3/4 of the mixture into the bottom of the pan. Spread melted chocolate on top. Crumble remaining peanut butter mixture over chocolate.

Bake at 350°F for 18-20 minutes. Cool in the pan before cutting into 24 bars.
